Tapioca sticks

Tapioca is also called as cassava which is famous Caribbean foods almost similar to our sabudana vada. Normally in India it is very famous in Kerala. I had lots of cooked tapioca today and wanted to try something with it and finally made this tapioca sticks. It is quiet starchy food adding peanuts in this gives nice crunch and elevates the taste. It is raining outside today and it tastes heavenly.


Things needed

Boiled Tapioca 1 1/2 cup
Soaked Tapioca Pearls 1/4 cup(optional)
Chili flakes
coriander leaves
Salt
Roasted peanuts
Cornflour for coating

Mash Tapioca, Sago, chili flakes coriander leaves and salt together.


Add Crushed peanuts and roll it like sticks. If peanut is not added 
it will be too starchy and wont taste good.

Apply little oil on sticks and coat it with spiced cornflour.  
Cornflour gives extra crispiness to your Sticks

Remove excess cornflour otherwise it will spoil oil like shown in the picture below.

 
Shallow fry it in little oil.


Serve it with Chili Sauce.
Perfect snack when it rains.
