Gnocchi with Red Sauce
Gnocchi is one of the good flavored pasta made with potato. I have given the recipe on how to make basic Gnocchi separately. Here I have made red sauce to go with Gnocchi. Try this out with different vegetables and you can also add chicken or seafood to this.
Onion 1 medium sized
Garlic 5 cloves
Chili flakes to taste
Capsicum to taste in different colors
Vegetables to your taste.
Tomato Puree 2 cups
Salt
Oregano 1 tsp
Cheese
Pour oil in frying pan and add crushed garlic, chili flakes and Onion to it.Fry it until it turns transparent.
Add Capsicum and fry it until it gets soft.
Add all the vegetables and cook it until slightly soft.
Add tomato puree and salt and cook until the flavour of raw tomatoes goes away.
Add little stock left over from cooking the pasta .(This has starch and helps in thickening the sauce).
Simmer the sauce and keep it for five minutes. You can store this sauce until serving time and then mix pasta.
Add Gnocchi or any other pasta which is boiled and ready. Mix it well and turn off the heat.
Sprinkle grated cheese and Oregano and serve it hot.
