Sorry for taking such a long time to post my next recipe. Try this at your house ,this is worth the waiting time.

Veg Satay with peanut Sauce

Who says Satay is Non veg? Here is a veg version of the satay chicken with peanut sauce. Try it with different veggies and enjoy.

Things to grind for peanut sauce.
  • Dry Chilies 5 or 6 to taste
  • Lemon grass 1 inch long thin stem
  • Garlic 4 cloves
  • Ginger small piece
  • Tamarind small piece as shown in picture
  • Shallots 3
  • Salt
Grind all of the above ingredients along with little water to  paste.

In a pan, pour 2 table spoons oil and add grinded masala paste and fry it until the raw smell goes away.

Grind 1 cup roasted peanuts and add it in the pan along with 1 tsp soy sauce and little salt.

Add water along with tamarind so as to attain a curry consistency.

Boil it until oil separates from the mixture. Peanut sauce is now ready. you can store this in the fridge for upto two weeks.

For Coating the Veggies.
  • Whole wheat powder one small cup
  • Soy sauce 1tsp
  • salt little
  • pepper to taste
  • Peanut sauce made for satay. 1 tbsp (this gives the taste of satay in veggies)

Mix all  the above mentioned ingredients with little water to obtain dipping consistency.

Dip veggies like Baby corn, paneer, tofu, eggplant inyo the mixture. and fry it. I prefer pan frying.

Satay is always made in barbecue, to give our veggies grilled taste. Grill it for sometime on roti making rack on gas stove like shown in the picture given below.

Serve the veggies with peanut sauce. This is a healthy evening snack.
