Spring roll sheet cups with Spinach stuffing.


This is the best dish to make if you are short of time. I have used spinach and potato in this recipe but you can use whatever vegetables you have at home, like baby corn, mushroom, carrot or you could even use chicken or fish fillets. It can be made with samosa sheet or spring roll sheet or even filo pastry. If you do not have any of this make your own samosa skin and use it. Use your imagination and enjoy it.

Ingredients

Spring roll sheets or samosa sheets
Potato 2 medium sized
Spinach cooked with 2 garlic cloves 1 cup
Egg 1(optional)
salt & pepper to taste
Cheese to taste






Mix spinach cooked with 2 garlic cloves with potato, salt and pepper.


Add one egg to the mixture and beat it.

Add one table spoon grated cheese and mix it well.


Grease muffin tray, cut spring roll sheets into squares slightly bigger than you muffin tray and place three of these one above the other.


Scoop spinach mixture into the spring roll sheet cup, sprinkle little grated cheese on top of the spinach mixture.
Bake it in the convection mode at 200 degree for 13 minutes on low rack until sheet turns brown.
