Apple Blackcurrant Healthy Cake
You may think what do you mean healthy, For me healthy is food you can eat even daily. Instead of packing store bought chips, biscuit, cakes for kids snack, giving these homemade healthy snacks is better and makes huge difference in their everyday diet.
I can hear you saying this, then should we not eat store bought cakes, doughnuts, fries......... Of course you can eat it once in a while like treat, not like everyday snack. In that way this kind of cake is verrrrrrrrrrry good for you and your kids.
Things needed to make this Apple Blackcurrant cake

Apple 1
Blackcurrant 1/4 cup
Butter 100g
Jaggery powder 1/2 cup
Egg 2
Baking powder 1tsp
Wheat flour 1 cup
Soften Butter to room temperature and add jaggery powder(available in organic stores or in bigger supermarkets) or Brown sugar and mix it well.
Add two eggs and beat it until little frothy. If you are not egg favorite then reduce one egg and add little milk to give more moisture.
Add grated apple and blackcurrant to egg and mix it well.
Add Flour and baking powder and combine it thoroughly like shown in the picture below.
Here I want to tell you some important tip. If you want the cake to be crusty on the top and soft on the inside then the cake mixture should be slightly thicker like shown in the picture. If you want fully soft cake then add milk and bring it to little watery dough.
For egg less cake omit egg and add a pinch of Baking Soda and then mix it little milk for moisture.
Transfer batter to greased tray and bake it in preheated oven for 20 minutes in 200 degrees.
Check it with knife to see if it is cooked, your knife will come clean when inserted in the center.
Place your cake in the wire rack, so it can cool on all the sides. this makes the cake to come out of pan easily without sticking in the bottom.
Where did this icing come, here i will tell you take 1tbsp of softened to room temperature butter add little by little icing sugar and whisk it well until it becomes creamy you can add any food coloring to this for attraction. I added cinnamon powder to this icing since cinnamon flavor and apple compliments very well. Decorate it with sparkles.
