Zuchini Pancakes with Vegetable Cheese Sauce



Always wanted to try this dish and tried it for first time last month when my younger daughter was still in home before her college started and it was a good hit in our house.
It was not even enough for four people and then i had to made little bit more extra side by side.
I have made pancake separately and the made cheese sauce separately. 
Today i had only mushroom so in that sauce added mushroom and bit carrot only, you can try it with different vegetables like cauliflower, broccoli, potato etc. And in the pancake we can try it with bottle gourd or potato instead of Zucchini. 


Things used for Pancake;
Grated Zucchini 1 medium sized
Egg 1 (or baking powder if you don't eat egg)
Wheat flour 1/2 cup
Salt 
Pepper
Milk for diluting

Things Used for Cheese Sauce
Butter 1 tbsp
Onion 1 small
Garlic 3 cloves
Capsicum in different color if available
Mushroom and Vegetables
Wheat flour 1 tbsp.
Salt 
Pepper
Milk
Cheese


Mix all the ingredients mentioned for pancake together into a smooth paste.



Add required amount of milk to dilute it.




For Cheese sauce, Heat butter and fry onion, Garlic and Capsicum in it until soft.


Add Vegetables Salt and Pepper to it.


When vegetables are softly cooked add Wheat flour and mix it.


Now slowly add Milk and mix it well.


Once milk starts boiling add Cheese and stitch of the flame.


Heat frying pan and make pancakes.
If your Cheese Sauce is thicker add more milk and serve it hot on top of Pancakes.



Try it out this will be a super hit recipe in your house.
