Eggplant Dip Quesadilla


It has been little long since I wrote in my blog, not  only blog it has been little long since i have cooked properly in my house. I have been using lots of eggplants in my recipes yet here again one more to add in the list. As always i have made it with Wheat flat bread and 99.99% except little cheese. Hope you all will try it out. You can add fried veges, mushrooms or even cooked Chicken or lamb to it. Be creative with what use Since returning back from holidays my fridge is literally empty so doing this dish with whatever i have handy now. So many days i have been thinking about making this dish and finally did it. This dip is almost like Baba Ganoush but in my own way.

Things needed 

For Eggplant Dip

Roasted Eggplant 1
Roasted Peanuts 2 Tbsp.
Garlic 1
Small Lemon Half
Paprika or chili powder
Spring onion
Olive oil


For Quesdilla

Wheat flat bread
Paneer
Spring Onion
Oregano
Chili flakes
Cheese

Roast Eggplant well until skin turns crispy. Scoop flesh from inside and keep it ready.



Take peanuts and garlic and blend it.

Add Eggplant flesh, lemon and salt to it and blend it again.


Transfer it to a jar and add sprinkle paprika and spring onion on top with little Olive oil. Your dip is ready now.


Take homemade paneer and add chili flakes, oregano and salt to it mix it well and keep it by aside.


Make flat breads and spread eggplant dip on it and sprinkle paneer mixture like shown in the picture.


Spread tomato mixture on top and grate cheese above it.

Fold flat bread in half and heat it in pan.

Yummy Eggplant dip Quesadilla is ready.

This same think can be used in bread instead of flat bread it will serve as a good snack for evening time.
