Two Ways Jacket Potato

Jacket Potato is a very good item to add in your Kids Party. I have shown here both Vegetarian and Non Vegetarian Jacket potato in my way. This is a dish with whole potatoes stuffed with different vegetables or chicken. You can also make it with Capsicum or firm tomatoes as outer shell.    Jacket Potato Ingredients Potatoes Homemade Breadcrumbs or Cheese Homemade ketchup or Tomato puree (Link For Homemade Crumbs and Ketchup are given below) For Vegetarians Vegetables of your choice like eggplant, carrot, spinach, Sweet corn, Baby corn etc Paneer (optional) Garlic  Onion Spring Onion Chili flakes Salt For Non Vegetarians Chicken Breast Piece Garlic  Onion Basil Leaves Chili Salt For Chicken Stuffing Mince Chicken with Basil or any other fresh herbs, Garlic, Chili and Salt. Try to keep it as little bigger chunks.  For Veg Stuffing Cut and grate all the vegetables and keep it ready. Fry Onion, Garlic and Caps

Paneer Stuffed Rice Rolls

Again this is done with leftover rice. While I was watching sushi preparation I got this idea and tried it. It has different textures with Crispy peanut, soft paneer, and rice adds another texture. This dish can be done with different stuffing like paneer, cheese, chicken fish different roasted vegetable sticks. Here I have shown it with paneer and also with chicken sausage. This is quiet a filling snack perfect for kids returning from school. It will be also a new addition for your party. Do all the preparation well ahead and store it to fry just before serving.

You may think what do you mean healthy, For me healthy is food you can eat even daily. Instead of packing store bought chips, biscuit, cakes for kids snack, giving these homemade healthy snacks is better and makes huge difference in their everyday diet.  I can hear you saying this, then should we not eat store bought cakes, doughnuts, fries......... Of course you can eat it once in a while like treat, not like everyday snack. In that way this kind of cake is verrrrrrrrrrry good for you and your kids.

I make coconut chutney everyday, How much ever i make there is always some leftover. Then i got this idea of making use of it to make Curd curry for lunch without wasting? It is very easy and tastes good with rice for Lunch.  In coconut we have spices which will give good taste for your curry and roasted chana dal which will give little thickens, so it works better for this curry.

Bajra Dosa

Bajra also known as Pearl millet, Kambhu, Sajalu in different language. This is Gluten free variety and very good. Bajra is commonly used in Rajastan and grows their in plenty. They make roti with flour and Kichadi with Whole Bajra.  This Bajra is easily available in all supermarkets to try. In Tamilnadu Kambhu Khool is very famous and commonly available during hot summer days on roadsides. Here I am  making Kambu Dosa try this and enjoy.

Homemade Wheat Pizza Base

Homemade Wheat Base, This pizza base once you mix it takes at-least one hour to raise. If you need urgent pizza base without raising time then try the other Potato instant pizza base recipe . I normally mix this flour and keep it overnight. Once mixing one batch Normally i make 2 or 3 pizzas and then left usually make some pinwheel rolls or some stuffed rolls like Salami pinwheel rolls or veg pinwheel rolls . Things needed Wheat flour 3 cups Yeast 1 Tbsp Warm water to mix yeast Salt Olive oil In Luke warm water mix yeast and keep it until it dissolves and become frothy. Mix yeast mixture in wheat flour with salt. Apply olive oil on top of dough and keep it in warm place for raising. In-case you need it urgently, then heat one glass of water in microwave and then keep the dough inside the oven with hot water for one hour it will raise faster. Once the dough is doubled you can use it to make Pizza, Pinwheel Rolls or Stuffed Buns.

No Cheese Spinach and Paneer Pizza

This is special for kids those who hate eating spinach, and this is not like special  and healthy without cheese unfortunately i did not have cheese in my fridge so made it without Cheese and opted paneer for that. Most of the time no always i make thin crust pizza only. My best choice of pizza is always the one i tried in Rome, Italy. There we saw some street shops which sell pizza and tried it, best pizza is that, with thin crispy crust as i write about it my mouth is watering. Here i have given Spinach pizza in this you add little cheese with paneer also. Things needed for this variety of Pizza Pizza base Dough Spinach 2 bunch Onion 1 Garlic 3 Wheat flour 1 Tbsp Milk 3 Tbsp Salt Pepper Chili flakes Paneer Olive oil Oregano

Southern Style Mushroom curry

This Mushroom curry has lots of sweet old memories attached to it. When I was young and school going kid in Salem we had a tradition of making chicken or mutton curry for Breakfast with Idly or Dosa or Puri on Sunday morning every week. In Salem most of the shops have this kind of Breakfast.Suddenly today I felt like making this Dosa and chicken curry, Since now I have stopped eating Non-Veg wanted to try the same curry with Mushroom. While making this curry memories of my mum making it and we all having it together come like flood. After I finished cooking this curry and served it with Dosa for my family, they liked the taste of curry and Crispy Dosa very much. If you eat Non-Veg then try it with Chicken or Lamb. Vegetarians can do it with Potato, Cauliflower, Paneer and even Soya meat.

Grilled Herb Chicken

Fresh Herbs mixed Grilled Chicken makes your taste-bud cry. Yes freshly crushed herbs with Chicken in Barbecue or Tandoor or simply shallow fried is best way to eat chicken. If I make this chicken my daughter likes to eat it with chutney only, no breads rotis or anything else with this Chicken. Within minutes this grilled chicken will be ready. If you have a big party and light up your grill then it is okay, otherwise just to grill few pieces of chicken this is the best method for grilling.
