Sweet Potato Cutlet

Here's another variation of vegetable cutlet . As a child I loved eating root vegetables especially tapioca but today due to some myths and sayings  I don't eat much of those. My husband keeps telling me and all his Clients that it is not the quantity of food that is important but rather the quality of food.I decided to make food which is very fresh and tastes good as well so that it can be eaten without guilt.

 I have used sweet potato instead of normal potato. 
This cutlet will taste unique with a little sweet and spicy taste and when you cook this you will find that the texture is also different.



Things I used to make these tasty cutlets are:

Sweet potatoes              - 2 big sized
Corn kernels, Carrot     - to taste (you can use other vegetables also)
Onion                            - 1 small
Coriander leaves           - to taste
Chili powder, salt          - to taste
Atta                               - 1 tbsp.
Bread crumbs for coating 

Boil sweet potatoes in microwave for five minutes with lid on.


 Grate the onion and the vegetables you are using and then peel skin off the sweet potatoes and smash it.


Mix all the above ingredients together. Sweet potato texture is not as starchy as normal potato so add little atta(wheat flour) to the mixture. This will act as a binding agent.

Mix little water in atta . This is used for coating the cutlets with breadcrumbs.

Shape the cutlet mixture and dip it first in atta and then in breadcrumbs. You can store these in freezer and fry it right before serving.

I shallow fried the cutlets but you can deep ffry it if you wish.



Yummy sweet potato cutlets are ready. You can eat as a snack or use it as a burger patty also.
This is the best snack for a rainy day. Try it out and you will be with the taste.
