Eggplant Lasagna Delight

Yes this is a delight to eat and makes you feel like you have eaten a good meal. Procedure of making this is similar to that of making a lasagna except that we use eggplants instead of lasagna sheets. Made with fresh ingredients it is a healthy but fancy dish. This dish is perfect for parties and potlucks, you can prep it well ahead and do just the baking part before serving. Tastes best when served with garlic bread.

Things needed for this delightful recipe

Eggplant  - 2 medium sized

For Tomato Sauce

Onion - 1 medium sized
Capsicum - 1
Garlic - 5 or 6 
Tomato - 3 large 
Chili flakes - to taste
Salt - to taste

For White sauce

Butter - 1 tbsp.
Garlic - 4 or 5 pods
Wheat flour - 2 tbsp. 
Milk - 1.5 cup
Nutmeg - One pinch
Pepper powder - to taste
Salt - to taste

For final assembly

Cheddar Cheese 
Oregano


Roast capsicum as shown in the picture below or in the oven.


When skin of Capsicum turns black take it off the fire and discard blackened skin.


Slice eggplant lengthwise and sprinkle it with chili powder and salt. 


Fry it with a little oil on a frying pan, and keep it aside.


Chop roasted capsicum and onion. Wash tomato and cook it in microwave for 4 minutes. Once it is cooked take off the skin and grind it. 

Fry onion and garlic with little butter or oil.

Add sliced Capsicum and fry it for a while, then add chili flakes and salt to it.


Add pureed tomato and fry it until raw smell goes and thickens a little.
Your tomato sauce is ready now.


Now you have to make white sauce.
Fry 3 crushed garlic cloves in some butter.
 Add 2 tbsp. wheat flour and mix it well for few seconds.

 Start adding milk slowly and stir it well so that there are no lumps. Make sure the flame is low while doing this. 
 Add a pinch of nutmeg powder and pepper powder to suit your taste and mix  well. Let it boil for few seconds and turn it off. Before turning down the flame add little salt.
 Now the actual assembling is going to start. Take a oven proof dish and spray it with little oil and spread little tomato sauce for the bottom layer.
 Arrange fried eggplants on top of it as shown in the picture.
 Now spread a little bit of  thetomato sauce and then the white sauce on top of the eggplant. Repeat the same process for 3 layers. 
 Grate cheese on top and sprinkle some Italian seasoning.
 Bake it for 10 minutes at 200 degree. Since all the elements are already cooked it needs to turn brown on top and heat should spread evenly.
