Marathi Eggplant Fry

Recently I had friends of my daughter visiting Bangalore from Mumbai. Unfortunately I was not available to entertain them and cook food. 
To my surprise they did most of the cooking and this Marathi Baigan fry was one of the dish they prepared in my house.  My daughter learned it from them and cooked it for us went we returned back.
Today I tried making that Baigan Fry and here is the recipe for Marathi Baigan Fry.
Batter is almost similar to Bhaji mix only did not add soda for it. 




Things needed for dipping powder
Besan flour 5 Tbsp
Rice flour 1 Tbsp
Chili powder
Jeera powder
Salt


Oil for shallow frying.
Mix all the ingredients for dipping powder together without water.

Slice Eggplant thinly like shown in the picture. coat it immediately with dipping powder on both sides and shake out extra powder.
Shallow fry it with little oil in a pan.
Keep pressing eggplant in the middle to bring out the water content and fry it until crispy in low flame.

This tasted good rice and dal. Try it out and send me your comments.
